This easy Spicy Hot Texas Pinto Bean recipe is made in the Instant Pot. It requires no sautéing or monitoring and makes a flavorful side dish that is gluten-free, vegan, and inexpensive.

This easy Spicy Hot Texas Pinto Bean recipe is made in the Instant Pot. It makes a flavorful side dish that is gluten-free, vegan, and inexpensive. Pair with cooked white rice or brown rice for a protein-rich meatless meal.

Ingredients
1 lb pinto beans, dried (about 2 1/4 cups by volume)
3 1/2 cups water
1 15-oz can tomatoes, crushed or diced
3 TBSP vegetable oil
3 TBSP dried onion flakes
1 1/2 tsp salt
2 tsp granulated garlic *
1 tsp cayenne pepper
1 1/2 tsp oregano, dried
2 tsp ground cumin
1/4 tsp hot red pepper flakes
* Granulated garlic is garlic that has been dried and ground. It is identified by its gritty, sand-like texture. Do not use garlic salt as the recipe will be too salty. Do not use garlic powder (which looks like flour) or the garlic flavor will be overwhelming.

Instructions
1. Rinse and drain the pinto beans in the colander. Add the drained pintos to the Instant Pot.
2. Add the water, tomatoes (do not drain), and the vegetable oil to the Instant Pot. Stir to combine.
3. Add the dried onion, salt, garlic, cayenne pepper, oregano, cumin, and hot red pepper flakes to the small bowl. Stir to combine. Add the mixed seasonings to the Instant Pot. Stir to combine.
4. Fit the lid to the Instant Pot and twist to seal. Program the Instant Pot for Pressure Cooking on High Pressure for 1 hour and 5 minutes (65 minutes). Press START to begin pressure cooking.
5. At the end of the cooking period allow 10 minutes of natural pressure release. After 10 minutes you may perform a manual pressure release (use caution to avoid burns from hot steam escaping the pressure release vent) or just allow the pressure to naturally release before opening the Instant Pot. Serve with cooked white or brown rice if desired.
